#1 Reserve Chardonnay 2021 Jespersen Ranch

The 2021 Reserve Chardonnay represents a barrel selection of the best Chardonnay of the vintage from Jespersen Ranch. We hand-sorted and whole cluster pressed the grapes into a stainless steel tank before transferring the juice into barrels for fermentation and aging. 45% of the barrels were new French oak. 73% of the wine fermented natively and 100% went through malolactic fermentation. After 17 months of aging, we selected the top 22 out of 75 barrels for this reserve bottling. The resulting wine has a creamy, soft texture balanced with clean minerality. Notes of sweet pineapple and toasted marshmallow are complemented with flavors of honeyed lemon and baked apple. $85

#2 Grenache 2020 Jespersen Ranch

We farm nine acres of Grenache at Jespersen Ranch, where the coastal influence produces a beautiful expression of the varietal. In 2020, we hand-harvested our Grenache and fermented them in nine different stainless-steel tanks. This small lot approach gave us the ability to use a variety of winemaking techniques to create layers that complement the characteristics of Grenache. We kept the percentage of new French oak barrels low (21%) to focus on bright fruit flavors and preserve freshness. The result is a lively and vibrant wine with hints of strawberry, white pepper and black tea. $60

#3 Syrah 2020 Edna Valley

We farm just nine acres of Syrah at Jespersen Ranch, our coastal vineyard just four miles from the Pacific Ocean. The site’s cool, foggy mornings and warm afternoon breezes create a unique environment to craft a Syrah that reflects the maritime climate of the vineyard. This is a robust wine, with dark fruit and savory flavors accented by broad, brushy tannins and a stunning acidity.

In 2020 we hand-harvested our Syrah grapes and brought them to the winery where we foot-stomped them for gentle extraction. The Syrah from this site always has an exceptionally dark, opaque color from the start and we fermented the juice in a combination of stainless steel and concrete tanks. We aged the wine in French oak barrels for 20 months before composing the final blend and bottling it. Jespersen Ranch Syrah is one of our favorite wines to age as it evolves beautifully over time. $60

#4 Reserve Cabernet Sauvignon 2021 Heart Hill Vineyard

Heart Hill Vineyard is a premier site for growing Bordeaux grapes, and the 2021 vintage was nothing short of spectacular. This wine is an exceptional representation of the dark, opulent and age-worthy characteristics that Cabernet Sauvignon is revered for. This bottle belongs in any Paso Robles Cabernet Sauvignon aficionado’s collection.

We hand-harvested the grapes from steep, rocky slopes early in the morning and fermented them in stainless steel tanks. We aged the wine in French oak barrels for a year. At that point, our Winemakers tasted each barrel and selected the 18 best barrels. Those barrels aged for an additional 16 months bringing the total aging time to 28 months. This wine has the hallmark flavors of a world-class Cabernet Sauvignon: dark cherry and sweet vanilla with an herbaceous streak and broad, brushy tannins. $95

#5 Cabernet Sauvignon Magnum 2017 Paso Robles

At nearly fifty acres planted, we farm more Cabernet Sauvignon than any other grape. In 2017 we harvested a little earlier than normal (1-2 weeks) due to September heat, but found the grapes had higher natural tannin and deeper color than we have seen in years. Each block is hand-harvested and most undergo 20-30 day fermentations to build color, phenolics and flavor. We aged the wine nearly 28 months in 43% new French Oak barrels, allowing the tannins to soften and the fruit flavors to marry. This is a classic vintage of Cabernet Sauvignon: dark chocolate and cherry flavors, powdery tannins and juicy acidity. $165
